Crock Pot Chicken & Salsa

Dinner time can be crazy! Juggling school schedules, extra curricular activities, housework, homework and life in general makes things hectic. I remember the stress of wanting good food on the table every night for dinner, but feeling like I just didn’t have the time. Even though we aren’t at that stage in our lives any more, I still appreciate quick and easy dinners that are healthy and ready to go.

That’s when this crock pot meal (with only three ingredients!) comes in handy! Whether you are in the midst of kid centered activities, school/work schedules or empty-nest activities, this dinner is easy and delicious.

Start with a large jar of your favorite salsa. Pour half the jar in the bottom of your crock pot. Layer three boneless, skinless chicken breasts on top of the salsa.

Top with your favorite burrito or taco seasoning mix and then the rest of the salsa! EASY! Cook on low for 6-8 hours or on high for 4 hours.

Crock Pot Chicken

When you’re ready to eat, shred the chicken with two forks and stir to combine. Serve on warm tortillas with your favorite toppings! We used shredded lettuce, diced tomato and red onion, some chopped fresh cilantro and lime wedges.

Fabulous Fish Tacos!

If you make one thing from my blog, it needs to be these Fish Tacos!

Once you try them, you’ll never make Fish Tacos another way.

As you know, I’m a big fan of Guy Fieri. On vacation last year, we ate at his restaurant – Johnny Garlic’s.


At Johnny Garlic’s you can write on the table-cloth. In fact, they encourage it! Our server told us that in the back of the restaurant there is a “Wall of Fame” with their favorite customer stories! We wrote about our road trip…
and then I wrote “Dear Guy, Meeting you is on my bucket list! So when ever that may be, I’ll see you then!” Talk about confident! Ha! Little did I know, just two months later in Santa Monica, I’d be crossing something off my Bucket List! Squeee! Seriously, I cried after this picture was taken. I’m such a dork!

When Guy’s cookbook came out, we bought it right away. One of our FAVORITE recipes is Tex Wasabi’s Koi Fish Tacos. I have to warn you, it’s a little labor intensive. Marinate the fish. Bread the fish. Fry the fish. Make Aoli (which is a MUST) Shred the cabbages. Warm the tortillas. It’s a lot but I am here to tell you, it’s worth every minute! We’ve made this many, many, many times, shared with friends and it continues to be our favorite. Make sure you try the aoli! It’s “Winner, Winner, Fish Taco Dinner!”
